Soy and ginger griddled sugar snap peas with mint salt

Soy and ginger griddled sugar snap peas with mint salt  

Serves 4  

1 tbsp soy sauce 

1 chilli finely chopped  

Thumb sized piece ginger, finely grated 

1 tsp honey  

1 tbsp sunflower oil  

200g sugar snap peas 

1 tsp maldon salt  

Few drops Kotanical peppermint oil  

1 sprig mint, leaves removed and finely chopped  

Whisk the soy, chilli, ginger, honey and oil together in a medium sized dish, toss through the sugar snap peas.
